Tropical Mango Cream Dessert
It’s a recipe week here on Nutritional Bites. And boy is this recipe as easy as… The title of this dessert, Tropical Mango Cream, makes you think of sunshine and oozes summer dessert. And on a hot day served very cold it’s a refreshing treat.
I also have a confession; I’m moving house tomorrow (again) so not only is this a quick and easy dessert to prepare; it’s also a quick and easy post to pop in this week.
If you’ve followed my blog for over a year, you’ll know I only arrived back in the UK from Hong Kong this time last year.
Nothing like moving to force you into having a good old clear out. Which is how I came across this old Weight Watchers cookbook from 2002, Pure Points. The corner of the page was turned over at this recipe. Yes, tut tut, I turn page corners over, and I also write notes in my cookbooks.
Tinned Mangos are full of vitamin A which helps maintain healthy skin and the body’s immune system. And not forgetting you need it for good vision.
This Tropical dessert comes in at 145 calories per serving according to the cookbook, and it talks about points per serving, but I’m not even sure Weight Watchers still use this same system.
The cookbook gives an alternative of using canned papaya, but I reckon you could also use canned peaches; though you would have to alter the title.
If you have a sweet tooth, you could crumble some meringue in just before serving, but that’s extra calories. It was so simple to throw together I made it again the next day replacing the mango with frozen bananas and fresh pineapple.
Ok, are you ready for how ridiculously simple this recipe is to make?
