Summer Berry Salad
This easy summer berry salad recipe has bursts of sweetness amongst the savoury flavours of cheese, nuts and onion. The flavours are all then tied together with the Tangy Turmeric Sweet Salad Dressing.
I vary the salad leaves for this recipe every time I make it, but I am partial to throwing in some rocket. Its peppery taste contrasts well with the sweet salad dressing.
At around 175 kcals per serving plus the salad dressing, it makes an attractive side to brighten up any main dish.
Or have a larger helping as a main meal. It’s full of healthy fats which can help you feel full, and it’s also packed full of nutrients.
Benefits of Berries
Strawberries are more than just Vitamin C. They also contain Folic Acid needed for maintaining healthy blood and cells, Vitamin K and calcium to name a few.
Berries have antioxidant properties known to help fight against diseases like cancer and cardiovascular disease. You can read more about antioxidants here.
And did you know antioxidant-rich food can aid your exercise recovery and help ease those sore muscles?
Full of Healthy Fats
This salad contains healthy fats; pecans, pumpkin seeds, avocado, extra virgin olive oil. We need good fats in our diet as they help provide vitamins, A D, E, and K; all vital for optimal health.
I’ve used feta cheese, but you can use your favourite cheese. It contains Vitamin A which helps maintain healthy skin and the body’s immune system: Magnesium which helps turn the food we eat into energy and of course cheese has calcium for healthy bones and teeth.
This tangy sweet salad dressing is around 80 kcals for a dessert spoon. Find the recipe for that here.
