This easy summer berry salad recipe has bursts of sweetness amongst the savoury flavours of cheese, nuts and onion. The flavours are all then tied together with the Tangy Turmeric Sweet Salad Dressing.

I vary the salad leaves for this recipe every time I make it, but I am partial to throwing in some rocket. Its peppery taste contrasts well with the sweet salad dressing.

At around 175 kcals per serving plus the salad dressing, it makes an attractive side to brighten up any main dish.

Or have a larger helping as a main meal. It’s full of healthy fats which can help you feel full, and it’s also packed full of nutrients.

Benefits of Berries

Strawberries are more than just Vitamin C. They also contain Folic Acid needed for maintaining healthy blood and cells, Vitamin K and calcium to name a few.

Full of Healthy Fats

This salad contains healthy fats; pecans, pumpkin seeds, avocado, extra virgin olive oil. We need good fats in our diet as they help provide vitamins, A D, E, and K; all vital for optimal health.

Feta Cheese

I’ve used feta cheese, but you can use your favourite cheese. It contains Vitamin A which helps maintain healthy skin and the body’s immune system: Magnesium which helps turn the food we eat into energy and of course cheese has calcium for healthy bones and teeth.

Instructions
  1. Combine the salad leaves, strawberries, blueberries, feta cheese and onion.
  2. Add salad dressing and combine gently as this dressing is quite thick.
  3. Top with the pecans and avocado
